Applesauce Cinnamon Sourdough Pancakes
Sourdough isn’t just for bread! You can use your sourdough starter to make some pretty amazing pancakes. They taste like spiced apple cider and have a tender, fluffy, yet slightly chewy consistency. Bonus: This recipe has only 5 main ingredients and comes together in less than 30 minutes (as long as you remember to feed your starter the night before!)

  1. Stir together the sourdough starter*, applesauce, and pumpkin pie spice until smooth. If the mixture is so thick it’s not pourable, add unsweetened almond milk, one tablespoon at a time, until the mixture is the consistency of yogurt. *Note: Feed your starter overnight and then measure it out for the recipe in the morning.
  2. Stir in the almonds.
  3. Heat a skillet over medium-low heat. Add a teaspoon of the coconut oil and pour the batter into the pan to form approximately 4-inch rounds (about 2-3 tablespoons of batter per round). Cook until small bubble begin to form, pop, and don’t fill back in. Flip and cook on the other side until golden.
  4. Repeat this process using the remaining coconut oil and batter.
