Ingredients
- 12 ounces dark chocolate 60% cacao or greater
- 1/4 cup sunflower seed oil
- 1 organic naval orange You'll be using the orange peel, too, so organic is especially important
- 1 15-ounce can black beans rinsed and drained
- 1/3 cup Water
- 3 large Eggs
- 1/4 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1 teaspoon Baking powder
- 1/2 teaspoon Salt
- 1-1/4 cups Whole wheat flour
- 1/4 cup Chopped walnuts optional -- but we recommend
- 2 tablespoon chopped dark chocolate
- 2 tablespoon chopped dark chocolate

Instructions
- Pre-heat oven to 350 degrees.
- Oil and flour a 9x13 inch baking pan.
- Place chocolate in a microwave-safe bowl. Heat in the microwave for 30 seconds on 50 percent power. Stir and repeat until chocolate is melted. Or, heat over a double boiler. Stir oil into chocolate. Set aside.
- Wash the orange and cut into quarters (do not peel). Place orange quarters, drained black beans, and water in a food processor or blender. Process/blend until smooth.
- Add the eggs, sugar, and vanilla extract to the mixture in the food processor. Process again, until smooth.
- Pour mixture into a large mixing bowl. Gently fold in the melted chocolate mixture.
- In a small bowl, whisk together the baking powder, salt and flour.
- Stir into the wet ingredients until well-blended. Add the walnuts, if using.
- Pour into prepared pan. Top with chopped chocolate. Bake at 350 for 45 minutes or until a knife inserted in the center comes out clean.
