Tahini, Coconut, and Dark chocolate Freezer Fudge
We’ve been making (and eating!) this freezer fudge for a few months now and it really hits the spot after dinner. It’s the perfect balance of sweet and chocolate-y. It’s definitely got a strong tahini flavor, so tahini lovers will really enjoy this treat. But, if you’re not a big tahini fan you can always sub another type of nut or seed butter.

  1. In a medium bowl, stir together the tahini and coconut oil until smooth.
  2. Add cacao powder and stir until smooth.
  3. Add maple syrup and stir until smooth.
  4. Gently stir in toasted coconut and cacao nibs.
  5. Line a small baking dish (about 6″x6″) with parchment paper. Spread the mixture onto the parchment paper until it’s about 1/2 inch thick. Depending on the size of your dish, the mixture might not reach the edges, and that’s ok. Or, if you have a smaller dish, you can always make thicker pieces of fudge.
  6. Sprinkle the top with sea salt flakes.
  7. Cover and freeze until completely firm. We usually let it freeze overnight.
  8. Slice and enjoy frozen. Store uneaten fudge in the freezer.
