Dark Chocolate-Orange Black Bean Brownies
You’ll never guess that these brownies contain black beans, but you’ll love what they do for the texture. These are some fudge-y brownies! The rich dark chocolate flavor is accented with the flavor of fresh orange and they’re just sweet enough.

  1. Pre-heat oven to 350 degrees.
  2. Oil and flour a 9×13 inch baking pan.
  3. Place chocolate in a microwave-safe bowl. Heat in the microwave for 30 seconds on 50 percent power. Stir and repeat until chocolate is melted. Or, heat over a double boiler. Stir oil into chocolate. Set aside.
  4. Wash the orange and cut into quarters (do not peel). Place orange quarters, drained black beans, and water in a food processor or blender. Process/blend until smooth.
  5. Add the eggs, sugar, and vanilla extract to the mixture in the food processor. Process again, until smooth.
  6. Pour mixture into a large mixing bowl. Gently fold in the melted chocolate mixture.
  7. In a small bowl, whisk together the baking powder, salt and flour.
  8. Stir into the wet ingredients until well-blended. Add the walnuts, if using.
  9. Pour into prepared pan. Top with chopped chocolate. Bake at 350 for 45 minutes or until a knife inserted in the center comes out clean.
