Maple Teriyaki Shrimp Stir-Fry Recipe
Bright veggies and a maple flavored teriyaki sauce come together for a fast dinner that feels equally as special as it is easy. If you’ve never made your own teriyaki sauce, try this one, it’s so easy and delicious that you’ll never need to buy it from a bottle again!

Instructions
  1. In a small bowl or jar, whisk together the teriyaki sauce ingredients. Set aside.
  2. Heat avocado oil in a large skillet over medium-high heat. Add the onion and sauté just until it begins to soften, about 3 minutes. Add carrot, bok choy, broccoli, and bell pepper and stir fry, until vegetables are tender but still crisp, about another 7 minutes.
  3. Remove vegetables from skillet.
  4. Pat shrimp dry with a paper towel. Add the toasted sesame oil to the skillet and cook the shrimp (or other protein) until cooked through, about 2-3 minutes on each side. Once the protein is cooked thoroughly, add the veggies and teriyaki sauce to the skillet. Allow the sauce to come to a simmer to thicken slightly, about 2 minutes. Toss all ingredients together to coat, then remove from heat.
  5. Divide rice (or grain of choice) into 1 cup servings and top each with 1/4 of the stir fry.
